Fairmont Hotels & Resorts, part of Accor, has opened reservations for Fairmont Cheshire, The Mere ahead of its 10 July 2026 debut in Northwest England.
The property will become Fairmont’s fourth hotel in the United Kingdom, joining The Savoy, A Fairmont Hotel, Fairmont Windsor Park and Fairmont St Andrews.
Set within 157 acres of Cheshire countryside with views over The Mere Lake, the resort is being positioned as a luxury countryside estate for stays, dining, wellness, golf and celebrations.
A New Chapter For The Mere
Fairmont Cheshire, The Mere will offer 116 bedrooms, including 23 suites, alongside dining and lifestyle experiences across the estate. Guests can book stays, dining at Gordon Ramsay at The Mere, afternoon tea and champagne at The Orangery, and British and Indian cuisine at The Club Lounge.

The estate will also include Fairmont Spa, a Spa Bar, and an 18-hole championship golf course. Fairmont describes the transformation as a contemporary countryside address that builds on The Mere’s history, from its mention in the Domesday Book of 1086 to its more recent life as a leisure estate and private club.

Dining, Events And Celebrations
The project follows a £35 million acquisition and an additional £90 million transformation by Select Group. Fairmont says the hotel will become a social epicentre for the region, adding a new luxury travel and lifestyle destination to Northwest England.
For events, the Grand Ballroom spans 1,000 square metres and can host up to 1,000 guests. Four boardrooms with landscape views will support meetings and private dining, while the wider estate is designed for weddings, multi-day celebrations and cultural ceremonies.
Reservations are now open for stays from 10 July 2026 onwards via Fairmont’s official website.
