Waste Reduction: Paperless solutions include seamless digital check-in and checkout, online newspapers and magazines replacing traditional prints, and digital menus for in-room dining and the mini bar. Plastic bottled water and in-room amenities are replaced with sustainable alternatives to minimise the use of plastic. Water dispensers are available at the public areas of the hotel to reduce waste.

Recycling Programme: Recycling measures include placing recycling bins in guestrooms and staff areas, sending leftover soap bars to a social enterprise, donating used furniture and equipment to non-profit organisations, as well as offering guests with recyclable coffee capsules and biodegradable tea bags.

Energy and Water Saving: In-room digital thermostats with energy-efficient modulating valves and faucet flow regulators are installed. Guests are encouraged to conserve water by reusing towels and bed linens during their stay. Over 95% of the lighting equipment in the hotel are environmentally friendly LED products.

Responsible Sourcing and Sustainable Menu: Sustainable and organic ingredients and local produce, such as ocean-friendly seafood, cage-free eggs and locally farmed vegetables, are prioritised during the menu design. JW Garden: Herbs are grown in the JW Garden at the hotel and incorporated into flavourful dishes and cocktails, elevating guests’ culinary journey with freshly picked ingredients.

Food Waste Management: Innovative recipes using different parts of the food such as lemon peels, fish bones, and watermelon rinds are developed by chefs to eliminate food waste. Surplus food is donated to a local charity, while food waste is recycled and turned into energy or resources with the Food Waste Collection Scheme.

Eco-Conscious Operations: By taking small steps such as implementing digital menus, offering portioned meals, and using biodegradable materials for takeaway packaging, the hotel restaurants embrace an eco-friendly operational approach.

Celebrating and respecting the bounty of the sea, the hotel’s alfresco seafood restaurant, Fish Bar, reopened in spring 2024 to present a sustainable dining experience after a comprehensive renovation.
